Our easy Roasted Garlic Sheet Pan Confit is a family-friendly recipe that delivers gourmet taste and versatility with minimal effort. This flavorful dish involves slowly caramelizing garlic in olive oil, infused with herbs, making it perfect for busy weeknights.
Ingredients
- 6–8 whole heads of garlic (about 30–40 cloves), peeled or unpeeled
- 1 cup (240ml) olive oil, good quality extra virgin
- 3–4 sprigs fresh rosemary
- 3–4 sprigs fresh thyme
- 0.5 tsp fine sea salt
- 0.25 tsp freshly ground black pepper
- Optional: 1 pint (300g) cherry tomatoes
- Optional: 1 cup (150g) small new potatoes, halved
- Optional: 1 large bell pepper, strips
Instructions
- Prep the Garlic: Gently separate 6-8 heads of garlic into individual cloves. Leave skins on for easier peeling post-roasting, or peel for faster oil infusion.
- Arrange & Season: Spread garlic cloves evenly on a 9×13 inch baking sheet, avoiding overcrowding. Drizzle generously with 1 cup (240ml) olive oil, coating most cloves. Scatter fresh herb sprigs, then season with 0.5 tsp salt and 0.25 tsp black pepper for even coverage.
- Roast to Perfection: Bake in a preheated oven at 375°F (190°C) for 35-45 minutes. Watch the garlic turn golden brown, deeply tender, and fragrant. Edges should caramelize. If browning too fast, loosely cover the sheet pan with foil to prevent burning.
- Cool & Store: Allow the entire Roasted Garlic Sheet Pan Confit, including oil, to cool completely on the sheet pan. The garlic will soften further as it cools, soaking up more infused oil.
Notes
Always choose firm, unblemished garlic heads and fresh herbs for best flavor. If garlic is not tender enough, bake for an additional 5-10 minutes. Allow to cool completely before storing; if too much oil, drain excess, reserving some for storage. Naturally gluten-free and suitable for plant-based diets.
