Ingredients
Scale
- 1 lb (450g) fresh radishes, trimmed and halved/quartered
- 3 cloves garlic, minced (or 1 heaping tbsp pre-minced)
- 2 Tablespoons (30ml) olive oil
- 0.5 teaspoon (3g) salt, plus more to taste
- 0.25 teaspoon (1g) black pepper, freshly ground
- Fresh parsley or chives, for garnish (optional)
Instructions
- Prep Radishes: Wash and thoroughly trim 1 lb (450g) of radishes. Cut larger ones in half or quarter for uniform cooking and a gorgeous blush. Ensure pieces are firm and ready.
- Season: In a spacious bowl, toss prepped radishes with 3 cloves minced garlic, 2 Tablespoons (30ml) olive oil, 0.5 teaspoon salt, and 0.25 teaspoon pepper. Coat evenly, perfectly prepped for the Blushed Garlic Roast.
- Roast: Spread in a single layer on a large sheet pan. Avoid overcrowding. Roast at 400F (200C) for 20-25 minutes, stirring halfway. They’re tender and golden. (If not browning, increase oven to 425F for the last 5-7 minutes to crisp.)
- Serve: Transfer your delicious roasted radishes recipe Blushed Garlic Roast to a warm dish. Garnish with fresh parsley, if desired, for a vibrant finish.
Notes
For a healthy upgrade, add fresh parsley or chives before serving. You can also swap half the radishes for carrots or Brussels sprouts. If not browning, increase oven to 425F for the last 5-7 minutes to crisp.
