Ingredients
- 800 g (28 oz) crushed tomatoes, high-quality
- 200 g (7 oz) roasted red pepper purée (from 2 large peppers)
- 2 tbsp (30 ml) olive oil, plus 2 tbsp for garnish
- 150 g (5 oz) onion, finely diced
- 3 cloves garlic, minced, divided
- 1 tsp (5 g) smoked paprika
- 1 tsp (5 g) dried oregano
- 1 tsp (5 g) dried basil
- 1 tsp (5 g) granulated sugar
- 0.5 tsp (2.5 g) salt, to taste
- 0.25 tsp (1.25 g) black pepper
- 5 fresh basil leaves, plus extra for garnish
Instructions
- Sauté Aromatics: Sauté diced onion in olive oil until translucent, then add garlic and cook briefly.
- Bloom Spices: Stir in smoked paprika, oregano, basil, and sugar; cook for 1 minute.
- Simmer Sauce: Add crushed tomatoes and red pepper purée; simmer for 20-25 minutes, stirring occasionally.
- Season and Adjust: Season with salt and pepper; adjust sweetness to taste.
- Make Drizzle: Blend olive oil, garlic, and basil until smooth.
- Plate and Swirl: Drizzle sauce with basil-garlic oil and swirl.
- Garnish and Serve: Garnish with fresh basil and serve.
