Description

This homemade Rudy’s cream corn offers a dreamy, velvety texture and sweet-savory aroma, making it a comforting side dish perfect for busy weeknights or special occasions.

Ingredients

Scale
  • 24 oz frozen sweet corn kernels, thawed
  • 2 tbsp unsalted butter
  • 1 cup heavy cream (36% fat)
  • 1 tsp granulated sugar
  • 2 oz cream cheese, cubed (optional)
  • 0.5 tsp fine sea salt, or to taste
  • 0.25 tsp freshly ground black pepper, or to taste

Instructions

  1. Prep the Corn: Thaw frozen corn kernels completely and drain them very well to prevent a watery dish.
  2. Melt Butter & Sauté: In a large, heavy-bottomed saucepan or skillet over medium heat, melt the butter. Add the corn and sauté for 5-7 minutes, stirring occasionally, until kernels are softened and heated through.
  3. Create the Cream Base: Reduce heat to low. Stir in the granulated sugar, fine sea salt, and freshly ground black pepper until combined.
  4. Add Cream & Cheese: Pour in the heavy cream and add the cubed cream cheese (if using). Stir constantly until the cream cheese is fully melted and incorporated, creating a smooth sauce.
  5. Simmer & Thicken: Gently simmer the mixture for 8-15 minutes, stirring occasionally, until it reaches your desired creamy, spoonable consistency. (Optional: If too thin, mix 1 tbsp cornstarch with 2 tbsp cold water to form a slurry, then whisk into simmering corn until thickened).
  6. Taste & Adjust: Carefully taste the warm cream corn and adjust seasonings (salt, pepper, or sugar) as needed. If too thick, loosen with a splash more heavy cream or milk.

Notes

Dairy-Free: Use full-fat coconut milk or a plant-based heavy cream alternative, and vegan butter. Lower Sugar: Reduce sugar or use a natural sweetener like maple syrup. Higher Protein: Stir in unflavored collagen or protein powder at the end. Flavor Boosters: Add a pinch of cayenne pepper, fresh chives or parsley, or a touch of smoked paprika for extra flavor. For best results, opt for organic corn and grass-fed butter.
