Ingredients
- 24 oz frozen sweet corn kernels, thawed
- 2 tbsp unsalted butter
- 1 cup heavy cream (36% fat)
- 1 tsp granulated sugar
- 2 oz cream cheese, cubed (optional)
- 0.5 tsp fine sea salt, or to taste
- 0.25 tsp freshly ground black pepper, or to taste
Instructions
- Prep the Corn: Thaw frozen corn kernels completely and drain them very well to prevent a watery dish.
- Melt Butter & Sauté: In a large, heavy-bottomed saucepan or skillet over medium heat, melt the butter. Add the corn and sauté for 5-7 minutes, stirring occasionally, until kernels are softened and heated through.
- Create the Cream Base: Reduce heat to low. Stir in the granulated sugar, fine sea salt, and freshly ground black pepper until combined.
- Add Cream & Cheese: Pour in the heavy cream and add the cubed cream cheese (if using). Stir constantly until the cream cheese is fully melted and incorporated, creating a smooth sauce.
- Simmer & Thicken: Gently simmer the mixture for 8-15 minutes, stirring occasionally, until it reaches your desired creamy, spoonable consistency. (Optional: If too thin, mix 1 tbsp cornstarch with 2 tbsp cold water to form a slurry, then whisk into simmering corn until thickened).
- Taste & Adjust: Carefully taste the warm cream corn and adjust seasonings (salt, pepper, or sugar) as needed. If too thick, loosen with a splash more heavy cream or milk.
