Instructions
- Prep Salmon: Carefully pat the salmon fillets very dry with paper towels. Using a sharp knife, cut the salmon into uniform 1-inch (2.5 cm) cubes.
- Make Glaze: In a medium bowl, whisk together the sweet chili sauce, soy sauce (or tamari), fresh lime juice, minced garlic, grated ginger, and sesame oil until well combined and smooth.
- Coat Salmon: Gently add the prepared salmon bites to the bowl with the glaze. Toss them carefully to coat about half of the salmon pieces with the mixture, leaving some for later.
- Cook Salmon: Choose your preferred method. (Oven Baking: Preheat oven to 400°F (200°C). Arrange coated salmon in a single layer on a parchment-lined baking sheet. Bake for 10-12 minutes, or until cooked through and flaky (internal temp 145°F (63°C)). (Air Fryer: Preheat air fryer to 375°F (190°C). Arrange salmon in a single layer in the basket, not overcrowded. Air fry for 8-10 minutes, shaking halfway through. (Skillet Method: Heat 1 Tbsp olive oil in a large non-stick skillet over medium-high heat. Add salmon in a single layer. Sear for 2-3 minutes per side, turning carefully, until golden brown and cooked through.
- Glaze & Serve: Once cooked, transfer the warm salmon bites back to the bowl with the remaining glaze. Toss gently to fully coat and distribute the vibrant sauce. Serve immediately.

For busy cooks, use pre-minced garlic and ginger or pre-cut salmon. For a gluten-free option, ensure sweet chili sauce and tamari are certified gluten-free. If air frying, a light spritz of cooking oil can help maintain moisture.
