Instructions

  1. Prep Salmon: Drain the 14.75-ounce can of salmon very well. Flake the salmon into a large bowl, using a fork to break it up. If using bone-in salmon, remove any skin or bones.
  2. Combine Ingredients: To the bowl, add the egg, mayonnaise, Dijon, lemon juice, chopped parsley, finely diced onion, Panko, and all seasonings. Gently mix everything until just combined, being careful not to overmix.
  3. Form Croquettes: Scoop about 0.25 cup of the mixture for each croquette. Gently form these into patties, roughly 1-inch thick.
  4. Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for 5 minutes.
