- 0.5 cup Panko breadcrumbs
- 1 large egg
- 2 tbsp mayonnaise

- 0.25 cup onion, finely diced
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.25 tsp garlic powder
- 0.25 tsp paprika

- Prep Salmon: Drain the 14.75-ounce can of salmon very well. Flake the salmon into a large bowl, using a fork to break it up. If using bone-in salmon, remove any skin or bones.
- Combine Ingredients: To the bowl, add the egg, mayonnaise, Dijon, lemon juice, chopped parsley, finely diced onion, Panko, and all seasonings. Gently mix everything until just combined, being careful not to overmix.
- Form Croquettes: Scoop about 0.25 cup of the mixture for each croquette. Gently form these into patties, roughly 1-inch thick.
- Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for 5 minutes.
- Air Fry: Lightly spray the air fryer basket with olive oil to prevent sticking. Carefully arrange the croquettes in a single layer, ensuring they don’t touch. Lightly spray the tops of the croquettes with olive oil spray.
- Cook: Air fry for 10-12 minutes, flipping them gently halfway through (around 5-6 minutes) to ensure even browning.
- Serve: Once cooked, carefully remove the croquettes and let them rest for a minute or two on a plate.
Notes
For a quick weeknight shortcut, use pre-chopped onion and parsley from the grocery store. Using fresh cooked wild-caught salmon is an optional upgrade for superior nutrition.
