  • 150 g (5 oz) Onion, Diced
  • 150 g (5 oz) Carrots, Sliced
  • 100 g (3.5 oz) Celery, Sliced
  • 300 g (10.5 oz) Potatoes, Cubed
  • 100 g (3.5 oz) Green Beans, Cut
  • 2 Cloves Garlic, Minced
  • 1.5 L (6 cups) Halal Beef Broth
  • 2 Tbsp (30 ml) Olive Oil
  • 1 tsp (5 g) Ground Cumin
  • 0.5 tsp (2 g) Smoked Paprika
  • Salt and Pepper, to Taste
  • 150 g (5.3 oz) Plain Yogurt (Halal-Certified)
  • 2 Tbsp (30 g) Parsley, Chopped
  • 1 Tbsp (5 g) Dill, Chopped
  • 1 Tbsp (5 g) Chives, Chopped
  • 1 tsp (5 ml) Lemon Juice
  • 1 tsp (2 g) Lemon Zest
  • 1 Tbsp (15 ml) Olive Oil (for Yogurt)
  • 2 Tbsp (20 g) Toasted Pumpkin Seeds
  • Parsley Leaves, for Garnish

Instructions

  1. Brown Beef: Brown 500g ground beef in 2 tbsp olive oil, seasoning with cumin, paprika, salt, and pepper.
  2. Sauté Aromatics: Sauté 150g diced onion and 2 minced garlic cloves with the beef until softened.
  3. Add Vegetables: Add 150g sliced carrots, 100g sliced celery, 300g cubed potatoes, and 100g cut green beans; cook briefly.
  4. Simmer Soup: Pour in 1.5L beef broth and simmer for 20-25 minutes, until vegetables are tender.
  5. Make Yogurt Swirl: Combine 150g yogurt, 2 tbsp parsley, 1 tbsp dill, 1 tbsp chives, 1 tsp lemon juice, 1 tsp lemon zest, and 1 tbsp olive oil.
  6. Season & Serve: Adjust seasoning, ladle into bowls, swirl with yogurt, and garnish with pumpkin seeds and parsley.

Notes

For a richer flavor, brown the beef in batches. Using waxy potatoes helps them hold their shape during simmering.
