Instructions

  1. Separate Drippings: Pour pan drippings into a heatproof bowl. Skim excess fat, leaving 2-3 tablespoons; add butter or oil if needed to reach 2-3 tablespoons total fat.
  2. Make Roux: Return the fat and drippings to a 10-inch skillet over medium-low heat. Sprinkle in 2-3 tablespoons of flour. Whisk for 1-2 minutes until smooth and golden brown, cooking out the raw flour taste. If dry, add 1 tablespoon more fat.
  3. Deglaze and Add Liquid: Slowly whisk in 2 cups of warm broth or stock. Scrape up any browned bits from the pan to incorporate their flavor. The liquid will bubble gently.
  4. Simmer and Thicken: Bring the mixture to a gentle simmer, whisking occasionally. Cook for 5-7 minutes until the gravy thickens and coats the back of a spoon, appearing glossy.
  5. Season and Strain: Taste the gravy and adjust salt and pepper as needed. For a silky-smooth gravy, strain it through a fine-mesh sieve into a serving vessel before serving.
