Savory Pan Gravy Recipe from Drippings

  • Author: Elina Mirkle
  • Total Time: 14 minutes
  • Yield: about 2 cups (480 ml), 4-8 servings 1x
  • Diet: General

Description

This Savory Pan Gravy recipe transforms pan juices into a rich, deeply flavorful sauce. It is an easy, hearty addition that elevates simple dishes and makes family meals feel special.

Ingredients

Scale
  • 0.25 cup pan drippings, from roasted meat
  • 23 Tbsp fat (butter or neutral oil), to supplement drippings if needed
  • 23 Tbsp all-purpose flour
  • 2 cups broth or stock (chicken, beef, or vegetable), warm
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Separate Drippings: Pour pan drippings into a heatproof bowl. Skim excess fat, leaving 2-3 tablespoons; add butter or oil if needed to reach 2-3 tablespoons total fat.
  2. Make Roux: Return the fat and drippings to a 10-inch skillet over medium-low heat. Sprinkle in 2-3 tablespoons of flour. Whisk for 1-2 minutes until smooth and golden brown, cooking out the raw flour taste. If dry, add 1 tablespoon more fat.
  3. Deglaze and Add Liquid: Slowly whisk in 2 cups of warm broth or stock. Scrape up any browned bits from the pan to incorporate their flavor. The liquid will bubble gently.
  4. Simmer and Thicken: Bring the mixture to a gentle simmer, whisking occasionally. Cook for 5-7 minutes until the gravy thickens and coats the back of a spoon, appearing glossy.
  5. Season and Strain: Taste the gravy and adjust salt and pepper as needed. For a silky-smooth gravy, strain it through a fine-mesh sieve into a serving vessel before serving.

Notes

For gluten-free gravy, use an equal amount of gluten-free flour or a cornstarch slurry (1 Tbsp cornstarch + 2 Tbsp cold water). If gravy is too thick, whisk in more warm broth; if too thin, use a cornstarch slurry (1 tsp cornstarch + 2 tsp cold water). Lumps can be removed by vigorous whisking or straining. Use low-sodium broth to control salt. Fresh herbs like thyme or sage and high-quality broth enhance flavor.
