  • 0.33 cup tomato ketchup
  • 1 tbsp Dijon mustard
  • 2 tbsp sweet pickle relish
  • 1 medium head garlic
  • 1 tsp olive oil

  • 0.5 tsp onion powder
  • 0.25 tsp freshly ground black pepper
  • 0.5 tsp fine sea salt
  • 1 tbsp fresh chives, finely chopped
  • 1 tsp apple cider vinegar

Instructions

  1. Prepare and Roast Garlic: Preheat oven to 400F (200C). Slice 0.25 inch off the top of the garlic head, place on foil, drizzle with 1 tsp olive oil, and wrap tightly.
  2. Roast Garlic: Roast for 40-50 minutes until very soft and caramelized. Allow to cool slightly.
  3. Mash Roasted Garlic: Squeeze softened garlic cloves into a bowl and mash with a fork until a smooth paste forms.
  4. Combine Wet Ingredients: In a medium bowl, whisk together mayonnaise, ketchup, Dijon mustard, sweet pickle relish, and apple cider vinegar until smooth.
  5. Add Spices and Mash: Add mashed garlic, 1 tsp sweet smoked paprika, 0.5 tsp onion powder, 0.25 tsp pepper, and 0.5 tsp salt. Whisk vigorously until uniform and well combined.
  6. Chill Sauce: Cover the sauce and refrigerate for at least 30 minutes to allow flavors to meld and thicken.
  7. Serve and Garnish: Transfer chilled sauce to a small bowl, create a swirl, dust with extra paprika, and sprinkle with 1 tbsp chives.

Notes

For a lighter sauce, substitute half the mayonnaise with Greek yogurt or sour cream. If out of sweet pickle relish, finely dice dill pickles. Use egg-free mayonnaise for an egg-free option. For family style, a pinch of sugar or dash of hot sauce can be added. If garlic is still tough after roasting, continue for 10-15 minutes more until easily mashed. Chilling allows flavors to meld and deepen.
