  • 300 g chicken sausage, sliced
  • 1 red onion, cut into wedges
  • 1 red bell pepper, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • 3 tbsp honey
  • 3 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp soy sauce
  • 0.25 tsp red pepper flakes (optional)
  • 1 tbsp parsley, chopped
  • 0.5 lemon, zested

Instructions

  1. Preheat & Prep: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Season Vegetables: Toss sweet potatoes, onion, and bell pepper with olive oil, salt, pepper, paprika, and thyme.
  3. Arrange on Pan: Spread vegetables in a single layer on the baking sheet.
  4. Add Sausage: Arrange sausage slices on the pan.
  5. First Roast: Roast for 25 minutes.
  6. Flip & Continue: Flip vegetables and sausage, roast for 10-12 minutes.
  7. Make Honey Glaze: Simmer honey, garlic, mustard, vinegar, soy sauce, and red pepper flakes.
  8. Glaze & Caramelize: Drizzle glaze over sausage and vegetables, toss, and roast for 3-4 minutes.
  9. Rest & Serve: Let rest for 5 minutes before serving.
