- 500 g sweet potatoes, cut into wedges
- 300 g chicken sausage, sliced
- 1 red onion, cut into wedges
- 1 red bell pepper, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp thyme
- 3 tbsp honey
- 3 garlic cloves, minced
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp soy sauce
- 0.25 tsp red pepper flakes (optional)
- 1 tbsp parsley, chopped
- 0.5 lemon, zested
Instructions
- Preheat & Prep: Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Season Vegetables: Toss sweet potatoes, onion, and bell pepper with olive oil, salt, pepper, paprika, and thyme.
- Arrange on Pan: Spread vegetables in a single layer on the baking sheet.
- Add Sausage: Arrange sausage slices on the pan.
- First Roast: Roast for 25 minutes.
- Flip & Continue: Flip vegetables and sausage, roast for 10-12 minutes.
- Make Honey Glaze: Simmer honey, garlic, mustard, vinegar, soy sauce, and red pepper flakes.
- Glaze & Caramelize: Drizzle glaze over sausage and vegetables, toss, and roast for 3-4 minutes.
- Rest & Serve: Let rest for 5 minutes before serving.

For optimal crispiness, avoid overcrowding the pan and ensure the oven is fully preheated. Feel free to substitute different types of sausage or vegetables.
