Description
This Shrimp Taco Slaw with Lime Jalapeño Confetti is a crisp, zesty topping perfect for tacos or a vibrant side dish. It’s quick, healthy, and elevates any meal with its fresh flavors.
Ingredients
- 0.5 head red or green cabbage (or 3 cups 70g pre-shredded)
- 2 medium carrots (or 1 cup 120g shredded)
- 0.25 small red onion (or 2 Tbsp 15g finely diced)
- 1 small jalapeño (or 1 Tbsp 7g minced)
- 0.25 cup 10g fresh cilantro, chopped
- 2 Tbsp 30ml lime juice (from 1–2 limes)
- 1 Tbsp 15ml honey or agave
- 2 Tbsp 30ml olive oil
- 0.5 tsp 2.5g salt
- 0.25 tsp 1g pepper
Instructions
- Prep Veggies: Finely shred the cabbage and grate the carrots using a sharp knife or food processor. Finely dice the red onion, then mince the jalapeño and fresh cilantro. Gather these vibrant ingredients in a large mixing bowl, aiming for uniform pieces.
- Whisk Dressing: In a small bowl, combine the fresh lime juice, olive oil, honey (or agave), salt, and pepper. Whisk vigorously until the dressing is well combined and slightly emulsified, forming a smooth, light liquid.
- Combine Ingredients: Add your prepped, colorful vegetables to the large bowl. Pour the prepared lime jalapeño dressing evenly over the top of the vegetables, ensuring good coverage.
- Toss Well: Using tongs or clean hands, thoroughly mix until all the cabbage, carrots, and other ingredients are evenly coated with the dressing. The mixture should glisten with moisture (add 1-2 more teaspoons of lime juice if too dry).
- Chill Slaw: For the best flavor and for the ingredients to meld beautifully, refrigerate the slaw for at least 15 to 30 minutes. The flavors deepen as it chills, and the cabbage slightly softens while retaining its crunch.
Notes
For time-saving, use pre-shredded coleslaw mix or a food processor for chopping. White vinegar can substitute lime juice. Maple syrup or granulated sugar can replace honey. Add diced bell peppers for extra color. Store dressed slaw for up to 2-3 days in an airtight container in the refrigerator. To avoid soggy slaw, dress just before serving or add half the dressing initially and the rest before serving. To adjust spice, remove jalapeño seeds and ribs for milder flavor, or use less. For a richer flavor, add a tiny amount of ground cumin.
