Instructions

  1. Preheat Oven & Prep Skillet: Preheat your oven to 350°F (175°C). Lightly grease a 9-10 inch cast iron skillet with butter or cooking spray to prevent sticking. For easier cleanup, you can line the bottom with parchment paper, leaving a slight overhang.
  2. Cream Wet Ingredients: In a large bowl, cream the softened butter with both granulated sugar and brown sugar until the mixture is light and fluffy and has a pale, airy appearance. Beat in the large egg and vanilla extract until well combined and smooth.
  3. Combine Dry & Fold Chips: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, mixing until just combined. (If it looks dry, splash in 1-2 Tbsp milk, but avoid overmixing as this leads to a tough cookie.) Finally, fold in the chocolate chips. This is a no-chill dough, so it goes straight from the bowl to the oven.
  4. Press Into Skillet: Evenly press the cookie dough into the prepared 10-inch cast iron skillet. Ensure it’s spread out to the edges for consistent baking.
