  • 1.5 kg (3.3 lb) boneless skinless chicken thighs
  • 240 ml (1 cup) low-sodium chicken broth
  • 120 ml (0.5 cup) apple cider vinegar
  • 120 ml (0.5 cup) pure maple syrup
  • 80 ml (0.33 cup) low-sodium soy sauce
  • 60 ml (0.25 cup) orange juice
  • 5 ml (1 tsp) liquid smoke
  • 5 ml (1 tsp) alcohol-free vanilla extract
  • 2 tbsp (30 ml) tomato paste
  • 2 tsp (10 ml) smoked paprika
  • 1 tsp (5 ml) black pepper
  • 1 tsp (5 ml) ground ginger
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) cornstarch with 2 tbsp (30 ml) water
  • 2 tbsp (30 ml) parsley, chopped
  • 1 tsp (5 ml) sesame seeds, toasted

Instructions

  1. Prepare Chicken: Cut 1.5 kg chicken thighs into bite-sized pieces and place in slow cooker.
  2. Whisk Sauce: Combine broth, vinegar, maple syrup, soy sauce, orange juice, liquid smoke, vanilla, tomato paste, paprika, pepper, ginger, and garlic.
  3. Coat Chicken: Pour sauce over chicken, ensuring it’s fully coated.
  4. Slow Cook: Cook on LOW for 6-8 hours or HIGH for 3-4 hours, until tender.
  5. Thicken Sauce: Stir in cornstarch slurry and cook for 5-10 minutes until thickened.
  6. Rest & Garnish: Let rest for 5 minutes, then garnish with parsley and sesame seeds.

Notes

For best results, cook on low for maximum tenderness. Adjust maple syrup to control sweetness.
