- 240 ml (1 cup) low-sodium chicken broth
- 120 ml (0.5 cup) apple cider vinegar
- 120 ml (0.5 cup) pure maple syrup
- 80 ml (0.33 cup) low-sodium soy sauce
- 60 ml (0.25 cup) orange juice
- 5 ml (1 tsp) liquid smoke
- 5 ml (1 tsp) alcohol-free vanilla extract
- 2 tbsp (30 ml) tomato paste
- 2 tsp (10 ml) smoked paprika
- 1 tsp (5 ml) black pepper
- 1 tsp (5 ml) ground ginger
- 2 cloves garlic, minced
- 1 tbsp (15 ml) cornstarch with 2 tbsp (30 ml) water
- 2 tbsp (30 ml) parsley, chopped
- 1 tsp (5 ml) sesame seeds, toasted
Instructions
- Prepare Chicken: Cut 1.5 kg chicken thighs into bite-sized pieces and place in slow cooker.
- Whisk Sauce: Combine broth, vinegar, maple syrup, soy sauce, orange juice, liquid smoke, vanilla, tomato paste, paprika, pepper, ginger, and garlic.
- Coat Chicken: Pour sauce over chicken, ensuring it’s fully coated.
- Slow Cook: Cook on LOW for 6-8 hours or HIGH for 3-4 hours, until tender.
- Thicken Sauce: Stir in cornstarch slurry and cook for 5-10 minutes until thickened.
- Rest & Garnish: Let rest for 5 minutes, then garnish with parsley and sesame seeds.
