- 800 g (1.75 lb) boneless skinless chicken thighs, cut into bite-size pieces, seasoned with smoked paprika and cumin
- 1 tsp smoked paprika
- 0.5 tsp ground cumin
- 2 tbsp (30 ml) olive oil
- 200 g (7 oz) onion, diced
- 3 cloves garlic, minced
- 150 g (5.3 oz) carrots, sliced
- 120 g (4.2 oz) celery, diced
- 300 g (10.5 oz) potatoes, cubed
- 400 g (14 oz) canned diced tomatoes, no added sugar
- 500 ml (2 cups) low-sodium vegetable broth
- 1 tbsp (15 ml) gluten-free soy sauce
- 1 tsp (5 ml) vegetarian Worcestershire sauce
- 1 tsp dried thyme
- 1 bay leaf
- 0.5 tsp black pepper
- 0.75 tsp salt
- 2 tbsp (30 g) cornstarch mixed with 2 tbsp (30 ml) cold water
- 0.25 cup (60 ml) heavy cream or coconut cream
- 2 tbsp (30 g) fresh parsley, chopped
- 1 tsp (5 ml) pomegranate molasses
Instructions
- Season Chicken: Combine chicken with paprika and cumin.
- Brown Chicken: Sear chicken in olive oil until browned.
- Sauté Vegetables: Sauté onion, garlic, carrots, and celery until softened.
- Combine in Slow Cooker: Add chicken, vegetables, potatoes, tomatoes, broth, soy sauce, Worcestershire sauce, thyme, bay leaf, pepper, and salt to the slow cooker.
- Slow Cook: Cook on Low for 6-7 hours or High for 3-4 hours.
- Thicken Stew: Stir in cornstarch slurry and cook on High for 20-25 minutes.
- Finish & Season: Stir in cream and adjust seasoning. Remove bay leaf.
- Rest & Serve: Let rest for 10 minutes, drizzle with molasses, sprinkle with parsley, and serve.
Notes
Browning the chicken is key for developing flavor. Using low-sodium broth allows you to control the saltiness.
