Description

This slow cooker chicken stew is a comforting and flavorful meal perfect for a chilly evening. It features tender chicken, hearty vegetables, and a rich broth, all cooked to perfection with minimal effort.


Ingredients

  • 800 g (1.75 lb) boneless skinless chicken thighs, cut into bite-size pieces, seasoned with smoked paprika and cumin
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 2 tbsp (30 ml) olive oil
  • 200 g (7 oz) onion, diced
  • 3 cloves garlic, minced
  • 150 g (5.3 oz) carrots, sliced
  • 120 g (4.2 oz) celery, diced
  • 300 g (10.5 oz) potatoes, cubed
  • 400 g (14 oz) canned diced tomatoes, no added sugar
  • 500 ml (2 cups) low-sodium vegetable broth
  • 1 tbsp (15 ml) gluten-free soy sauce
  • 1 tsp (5 ml) vegetarian Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • 0.5 tsp black pepper
  • 0.75 tsp salt
  • 2 tbsp (30 g) cornstarch mixed with 2 tbsp (30 ml) cold water
  • 0.25 cup (60 ml) heavy cream or coconut cream
  • 2 tbsp (30 g) fresh parsley, chopped
  • 1 tsp (5 ml) pomegranate molasses

Instructions

  1. Season Chicken: Combine chicken with paprika and cumin.
  2. Brown Chicken: Sear chicken in olive oil until browned.
  3. Sauté Vegetables: Sauté onion, garlic, carrots, and celery until softened.
  4. Combine in Slow Cooker: Add chicken, vegetables, potatoes, tomatoes, broth, soy sauce, Worcestershire sauce, thyme, bay leaf, pepper, and salt to the slow cooker.
  5. Slow Cook: Cook on Low for 6-7 hours or High for 3-4 hours.
  6. Thicken Stew: Stir in cornstarch slurry and cook on High for 20-25 minutes.
  7. Finish & Season: Stir in cream and adjust seasoning. Remove bay leaf.
  8. Rest & Serve: Let rest for 10 minutes, drizzle with molasses, sprinkle with parsley, and serve.

Notes

Browning the chicken is key for developing flavor. Using low-sodium broth allows you to control the saltiness.
