  • 2 tsp (4 g) fresh rosemary, chopped
  • 1 tsp (2 g) fresh thyme leaves
  • 240 ml (1 cup) low-sodium vegetable broth
  • 30 ml (2 tbsp) soy sauce (halal certified)
  • 15 ml (1 tbsp) Worcestershire sauce (halal certified)
  • 1 tsp (2 g) smoked paprika
  • 1 g black pepper
  • 6 g kosher salt
  • 15 ml (1 tbsp) olive oil
  • 15 ml (1 tbsp) pomegranate molasses (optional)
  • 8 g fresh parsley, chopped
  • 8 g toasted almond slivers

Instructions

  1. Prepare Beef: Pat beef dry and season with salt and pepper.
  2. Sear Beef: Sear beef in batches until browned on all sides.
  3. Sauté Aromatics: Sauté onion and garlic until fragrant.
  4. Deglaze Skillet: Scrape up browned bits from skillet with broth.
  5. Combine Ingredients: Layer potatoes, aromatics, herbs, and spices with beef in slow cooker.
  6. Add Liquids: Pour in broth, soy sauce, Worcestershire sauce, and pomegranate molasses (optional). Dot with butter.
  7. Slow Cook: Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  8. Finish & Serve: Whisk in remaining butter and adjust seasoning. Rest before serving.
