- 1.5 kg (3.3 lb) Beef Chuck Roast, trimmed & halal-certified
- 45 g (3 Tbsp) Unsalted Butter, divided
- 6 Cloves Garlic, minced
- 5 g (1 tsp) Smoked Paprika
- 5 g (1 tsp) Ground Black Pepper
- 5 g (1 tsp) Kosher Salt
- 5 g (1 tsp) Dried Thyme
- 30 ml (2 Tbsp) Halal-certified Soy Sauce
- 250 ml (1 cup) Low-Sodium Vegetable Broth
- 800 g (1.75 lb) Baby Potatoes, halved
- 2 Medium Carrots, cut into 2-cm (¾-inch) pieces (optional)
- 15 ml (1 Tbsp) Fresh Lemon Juice
- 2.5 g (½ tsp) Ground Sumac
- 15 g (1 Tbsp) Chopped Fresh Parsley – garnish
- 15 g (1 Tbsp) Toasted Almond Slivers – garnish
- 5 g (1 tsp) Smoked Paprika Powder – garnish
Instructions
- Prepare Beef: Season beef with salt, pepper, paprika, and thyme.
- Sear Beef: Sear beef in butter until browned on all sides.
- Sauté Garlic: Sauté garlic in butter, then deglaze pan with broth and soy sauce.
- Combine in Slow Cooker: Add sauce, beef, potatoes, and carrots to slow cooker.
- Slow Cook: Cook on low for 8-10 hours or high for 4-5 hours.
- Thicken Sauce: Simmer cooking liquid to thicken.
- Slice & Serve: Slice beef, drizzle with sauce, and garnish.
Notes
For optimal flavor, don’t skip searing the beef. Deglazing the pan captures flavorful browned bits. Adjust seasoning to taste.
