- 2 tbsp (30 ml) olive oil
- 3 cloves garlic, minced
- 150 g (5 oz) onion, diced
- 60 ml (¼ cup) honey
- 60 ml (¼ cup) Dijon mustard
- 30 ml (2 tbsp) whole grain mustard
- 15 ml (1 tbsp) apple cider vinegar
- 2.5 ml (½ tsp) smoked paprika
- 1.25 ml (¼ tsp) black pepper
- 2.5 ml (½ tsp) salt
- 120 ml (½ cup) chicken broth
- Cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)
- 6 g (2 tbsp) parsley, chopped
- 15 g (1 tbsp) pomegranate arils
- 1 lemon, cut into wedges
Instructions
- Prepare Chicken: Season chicken thighs with salt and pepper.
- Sear Chicken: Sear chicken in olive oil until browned.
- Sauté Aromatics: Sauté onion and garlic in the same skillet.
- Make Sauce: Whisk together honey, mustards, vinegar, and paprika.
- Combine & Slow Cook: Pour sauce over chicken and cook on low for 6-7 hours or high for 3-4 hours.
- Thicken Sauce: Stir in cornstarch slurry and cook until thickened.
- Rest & Serve: Let rest before serving with lemon wedges.
Notes
Using chicken thighs ensures a moist and tender result. Deglazing the pan with chicken broth adds extra flavor to the sauce. Adjust honey to control sweetness.
