Ingredients

  • Garlic (2 cloves): Minced garlic.
  • Smashburger Seasoning (5g / 1 tsp): Salt, pepper, garlic & onion powder blend.
  • Vegetable Oil (30ml / 2 tbsp): Neutral oil for cooking.
  • Flour Tortillas (4 large, ≈30cm / 12-inch): Pliable, large tortillas.
  • Mozzarella Cheese (150g / 5oz): Shredded mozzarella.
  • Cheddar Cheese (150g / 5oz): Shredded medium or sharp cheddar.
  • Sour Cream (120g / ½ cup): Base for the chipotle lime crema.
  • Chipotle Powder (5g / 1 tsp): Smoky heat for the crema.
  • Smoked Paprika (2.5g / ½ tsp): Enhances smoky flavor.
  • Lime Juice (15ml / 1 tbsp): Freshly squeezed lime juice.
  • Fresh Cilantro (8g / 2 tbsp, plus extra): Chopped cilantro for flavor & garnish.
  • Salt and Black Pepper: To taste.

Instructions

  1. Prepare Crema: Combine sour cream, chipotle powder, paprika, lime juice, and cilantro; whisk until smooth.
  2. Smash Burgers: Form beef into balls, press thin in hot oil, season with seasoning, salt, and pepper.
  3. Cook Burgers: Cook 2-3 minutes per side, crumble in pan, then remove.
  4. Layer Tortilla: Place tortilla in skillet, sprinkle with mozzarella and cheddar.
  5. Add Filling: Scatter beef and drizzle crema over cheese.
  6. Top & Cook: Sprinkle with remaining cheese, top with another tortilla, cook 2-3 minutes per side until golden.
  7. Rest & Cut: Let rest 2 minutes, then cut into wedges.
