- 500g (1 lb) ground beef, 80/20 blend
- 225g (8 oz) cream cheese, softened
- 150g (1 cup) cheddar cheese, shredded
- 100g (1 cup) buttery crackers, crushed
- 1 large egg
- 1 tsp (5g) garlic powder
- 1 tsp (5g) onion powder
- 0.5 tsp (2g) black pepper
- 0.5 tsp (2g) salt
- 2 tbsp (30ml) chipotle peppers in adobo, minced
- 2 tbsp (30ml) lime juice, fresh
- 1 tbsp (15ml) honey
- 1 tbsp (14g) butter, melted
- 2 tbsp (8g) cilantro, chopped
- 1 tsp (2g) lime zest
Instructions
- Preheat & Prep: Preheat oven to 190°C (375°F) and grease a mini-muffin tin.
- Combine Base: Mix ground beef, cream cheese, egg, garlic powder, onion powder, salt, and pepper.
- Add Cheese & Texture: Fold in cheddar cheese and half of the crushed crackers.
- Fill Muffin Tin: Spoon mixture into muffin tin, filling ¾ full.
- Make Glaze: Whisk together chipotle peppers, lime juice, honey, and butter.
- First Glaze: Brush bites with half of the glaze.
- Bake: Bake for 18-20 minutes, until golden brown.
- Second Glaze: Brush with remaining glaze after baking.
- Garnish & Serve: Sprinkle with remaining crackers, cilantro, and lime zest.
Notes
For a smoother texture, ensure cream cheese is fully softened. Adjust chipotle pepper amount to control spice level.
