  • 1 Bay Leaf
  • 500 ml (2 cups) Vegetable or Seafood Stock
  • 250 ml (1 cup) Heavy Cream
  • Salt and Pepper, to Taste
  • 100 ml (⅓ cup) Heavy Cream (for swirl)
  • 5g (1 tsp) Chipotle Powder
  • 2g (½ tsp) Smoked Paprika (for swirl)
  • 30g (2 Tbsp) Corn Kernels, Toasted
  • 5g (1 Tbsp) Fresh Cilantro, Chopped

Instructions

  1. Sauté Aromatics: Sauté onion, celery, and carrots in olive oil and butter until softened.
  2. Bloom Spices: Add garlic, smoked paprika, thyme, and bay leaf; cook until fragrant.
  3. Simmer Soup: Add corn and stock; simmer for 10 minutes.
  4. Cook Shrimp: Add shrimp and cook until pink and opaque.
  5. Blend Bisque: Blend until smooth, leaving some corn for texture.
  6. Enrich with Cream: Stir in heavy cream and season with salt and pepper.
