- 200g yellow onion, thinly sliced
- 300g red bell peppers, sliced
- 250ml (1 cup) apple cider vinegar
- 150g (¾ cup) granulated sugar
- 1 tsp (5g) kosher salt
- 1 tsp (2g) smoked paprika
- ½ tsp (1g) ground cumin
- 2 tbsp (30ml) honey
- 1 tbsp (15ml) water
- 1 tbsp (15ml) vegetable oil
- 1 tsp (5g) toasted sesame seeds, for garnish
Instructions
- Prepare Vegetables: Slice peppers and onions thinly for even pickling.
- Char Vegetables: Heat oil, char peppers and onions for 3-4 minutes.
- Make Pickling Liquid: Combine vinegar, sugar, salt, paprika, cumin, honey, and water; simmer for 2 minutes.
- Combine & Pickle: Transfer charred vegetables to a sterilized jar; pour hot liquid over them.
- Seal & Cool: Seal jar and cool to room temperature.
- Refrigerate & Mature: Refrigerate for at least 4 hours, preferably overnight.
- Serve & Garnish: Serve with sesame seeds.
Notes
Sterilize the jar for safe storage. Resting overnight allows flavors to meld. Experiment with adding red pepper flakes or garlic.
