Description
A vibrant blend of tropical fruits in a layered, restaurant-quality smoothie. This recipe recreates the famous Pineapple Surf from Smoothie King, featuring a creamy cardamom coconut swirl.
Ingredients
Scale
- 1.5 cups frozen pineapple chunks
- 0.75 cup frozen strawberries
- 1 medium kiwi, peeled and quartered
- 0.5 large banana, peeled
- 0.5 cup coconut water
- 0.5 cup full-fat canned coconut milk (chilled)
- 1 tablespoon maple syrup
- 0.5 teaspoon vanilla extract
- 0.25 teaspoon ground cardamom
- 0.5 cup ice cubes (optional)
Instructions
- Prepare Cardamom Cream: Scoop thick cream from chilled, unshaken coconut milk. Whisk with maple syrup, vanilla extract, and cardamom until completely smooth. Set aside.
- Blend Smoothie Base: Combine frozen pineapple, strawberries, kiwi, banana, and coconut water in a high-speed blender. Blend until smooth, adding ice if needed for a thicker consistency.
- Assemble First Layer: Pour half of the smoothie into a tall glass. Spoon one-third of the cream on top and gently swirl using a skewer to create ribbons without fully mixing.
- Layer and Swirl Again: Pour remaining smoothie over the first layer. Spoon another third of the cream on top and gently swirl again.
- Garnish and Serve: Drizzle remaining cream over the top and garnish with a pinch of ground cardamom. Serve immediately to maintain the layered appearance.
Notes
Use a chilled can of full-fat coconut milk (unshaken) to separate the cream properly for swirling. For the best layered effect, use very cold ingredients and avoid overmixing during assembly.
