Description

A light and airy homemade snow cream recipe that uses standard whole milk and sugar instead of condensed milk. This fast, simple dessert requires minimal planning and captures the essence of winter with a unique soft-serve texture, topped with a warm spiced honey drizzle.

Ingredients

Scale
  • 8 cups fresh, clean snow
  • 1 cup chilled whole milk
  • 1/4 cup granulated sugar
  • 1 teaspoon alcohol-free vanilla extract
  • 1/2 cup honey
  • 1/2 teaspoon ground green cardamom
  • pinch salt
  • Optional garnish: fresh orange zest

Instructions

  1. Prepare Spiced Honey Drizzle: In a small saucepan, combine honey, cardamom, and salt over low heat for 2-3 minutes, stirring occasionally until warm and fluid. Set aside to keep warm.
  2. Combine Snow Cream Base: Place 8 cups of fresh snow in a large mixing bowl. Pour the chilled whole milk, granulated sugar, and vanilla extract over the snow.
  3. Mix Vigorously: Immediately mix with a spatula or large spoon for 1-2 minutes until the sugar dissolves and the snow reaches a creamy, soft-serve consistency. Add more snow if the mixture becomes too watery.
  4. Serve Immediately: Spoon generous portions into individual chilled bowls. Drizzle with the warm spiced honey and garnish with fresh orange zest before serving immediately.

Notes

To achieve the best texture, ensure all ingredients and bowls are as cold as possible before starting. Work very quickly during the mixing phase; speed prevents melting. Do not attempt to save leftovers in the freezer, as the texture changes completely upon freezing.
