- 1 cup (120g) all-purpose flour
- 0.25 cup (60ml) extra virgin olive oil, plus more
- 0.5 teaspoon (3g) fine sea salt, plus extra
- 1–2 tablespoons (15-30ml) Smoked Paprika Dusting
Instructions
- Combine Dough: In a large mixing bowl, combine sourdough discard, all-purpose flour, olive oil, and fine sea salt. Mix with a sturdy spoon until a shaggy dough forms, feeling slightly sticky.
- Lightly Knead Dough: Turn the dough onto a lightly floured surface. Knead gently for 1-2 minutes until smooth and cohesive. If your dough feels too dry and crumbly, splash in 1-2 teaspoons of water or olive oil until it comes together.
- Preheat Oven And Roll Dough: Preheat your oven to 350F (175C). Divide dough in half. On parchment paper, roll one half very, very thinly (aim for about 0.0625 inch thick). The thinner, the crispier!
- Dust And Cut Crackers: Lightly brush the rolled dough with more olive oil. Generously sprinkle your homemade Smoked Paprika Dusting over the surface for maximum flavor. Use a pizza cutter or sharp knife to cut into squares, rectangles, or triangles.
- Bake Crackers: Carefully slide the parchment paper with crackers onto a baking sheet. Bake for 15-20 minutes until edges are golden brown and crackers feel firm. Watch closely as times vary.
