Instructions

  1. Combine Dough: In a large mixing bowl, combine sourdough discard, all-purpose flour, olive oil, and fine sea salt. Mix with a sturdy spoon until a shaggy dough forms, feeling slightly sticky.
  2. Lightly Knead Dough: Turn the dough onto a lightly floured surface. Knead gently for 1-2 minutes until smooth and cohesive. If your dough feels too dry and crumbly, splash in 1-2 teaspoons of water or olive oil until it comes together.
  3. Preheat Oven And Roll Dough: Preheat your oven to 350F (175C). Divide dough in half. On parchment paper, roll one half very, very thinly (aim for about 0.0625 inch thick). The thinner, the crispier!
