- 500 g (1.1 lb) chicken breasts, thinly sliced
- 4 large flour tortillas (≈30 cm / 12 in)
- 150 g (5.3 oz) cream cheese, softened
- 1 chipotle pepper in adobo, minced
- 1 tbsp (15 ml) adobo sauce
- 1 tbsp (15 ml) lime juice
- 2 tbsp (30 ml) cilantro, chopped
- 100 g (3.5 oz) corn kernels
- 1 small red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 tsp (5 ml) cumin
- 1 tsp (5 ml) smoked paprika
- ½ tsp (2.5 ml) garlic powder
- Salt and pepper to taste
- 2 tbsp (30 ml) olive oil
- Garnish: cilantro, lime zest
Instructions
- Prepare Cream Cheese Swirl: Blend softened cream cheese, chipotle pepper, adobo sauce, lime juice, and cilantro until smooth.
- Season Chicken: Coat thinly sliced chicken with cumin, paprika, garlic powder, salt, and pepper.
- Cook Chicken: Sauté seasoned chicken in olive oil until cooked through.
- Sauté Vegetables: Sauté corn, bell pepper, and jalapeño in olive oil until slightly softened.
- Assemble Rolls: Spread cream cheese swirl on tortilla, add chicken and vegetables.
- Roll Tortillas: Roll tortillas tightly, tucking in ends.
- Bake Rolls: Brush with olive oil and bake at 200°C (400°F) for 10-12 minutes.
- Rest, Slice, Serve: Let rest, slice diagonally, and garnish.
Notes
Using fully softened cream cheese is key for a smooth swirl. Adjust chipotle pepper amount to control spiciness.
