Description
This classic spam sandwich recipe transforms simple ingredients into a hearty meal, perfect for busy weeknights. Featuring savory glazed beef luncheon meat and crispy bread, it’s an irresistible and budget-friendly dish.
Ingredients
Scale
- 7 oz canned beef luncheon meat, thinly sliced
- 4 slices white sandwich bread
- 2 tablespoons neutral cooking oil (like sunflower or canola oil)
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon finely minced kimchi
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon toasted sesame oil
- 1 teaspoon light brown sugar
- 1 tablespoon water
- 2 tablespoons mayonnaise
- 0.5 sheet toasted nori (seaweed), cut into small strips or crumbled
Instructions
- Prepare Meat and Glaze: Slice the canned beef luncheon meat into about four 0.25-inch thick pieces. In a small bowl, whisk together the gochujang, minced kimchi, rice vinegar, soy sauce, toasted sesame oil, light brown sugar, and water until smooth. Set aside.
- Cook and Glaze Luncheon Meat: Heat 2 tablespoons neutral cooking oil in a 10-inch non-stick skillet over medium heat. Add the sliced luncheon meat and cook for 2-3 minutes per side until golden brown and slightly crispy. Reduce heat to low. Pour the prepared Spicy Kimchi Glaze evenly over the meat slices. Simmer gently for 1-2 minutes, turning occasionally, until the glaze thickens slightly and coats the meat evenly. Remove from heat.
- Toast the Bread: While the luncheon meat is glazing, lightly toast the 4 slices white sandwich bread in a separate dry skillet, toaster, or under a broiler until golden brown. This helps prevent a soggy sandwich.
- Assemble Sandwiches: Spread 2 tablespoons mayonnaise evenly on one side of each toasted bread slice. Place two glazed luncheon meat slices on one mayonnaise-spread toast. Top with another piece of toast, mayonnaise-side down. Repeat for the second sandwich. Garnish with 0.5 sheet toasted nori, cut into small strips or crumbled, for a crisp finish.
Notes
To save time on a busy weeknight, prepare the spicy kimchi glaze ahead of time. Toasting the bread thoroughly helps prevent a soggy sandwich.
