Instructions

  1. Prepare Meat and Glaze: Slice the canned beef luncheon meat into about four 0.25-inch thick pieces. In a small bowl, whisk together the gochujang, minced kimchi, rice vinegar, soy sauce, toasted sesame oil, light brown sugar, and water until smooth. Set aside.
  2. Cook and Glaze Luncheon Meat: Heat 2 tablespoons neutral cooking oil in a 10-inch non-stick skillet over medium heat. Add the sliced luncheon meat and cook for 2-3 minutes per side until golden brown and slightly crispy. Reduce heat to low. Pour the prepared Spicy Kimchi Glaze evenly over the meat slices. Simmer gently for 1-2 minutes, turning occasionally, until the glaze thickens slightly and coats the meat evenly. Remove from heat.
