- 1L (4 cups) Low-Sodium Vegetable Broth
- 200g (7oz) Canned Diced Tomatoes, Drained
- 1 Medium Carrot, Diced
- 1 Celery Stalk, Diced
- 1 Small Onion, Finely Chopped
- 2 Garlic Cloves, Minced
- 2 tbsp (30ml) Olive Oil, Divided
- ½ tsp Dried Oregano
- ½ tsp Dried Thyme
- Salt and Pepper to Taste
- 100g (3.5oz) Sun-Dried Tomatoes in Oil, Drained
- 100ml (½ cup) Heavy Cream (or Coconut Cream)
- 1 tbsp (15ml) Olive Oil (for cream)
- 1 Small Garlic Clove, Minced (for cream)
- Pinch of Smoked Paprika
- 2 tbsp (15g) Grated Pecorino Romano (or Halal Hard Cheese)
- Fresh Basil Leaves, Torn
- Drizzle of Extra-Virgin Olive Oil
Instructions
- Brown Sausage: Sauté sliced sausage until browned.
- Sauté Aromatics: Sauté onion, carrot, celery, and garlic until softened.
- Simmer Soup: Add herbs, broth, tomatoes, and sausage; bring to a boil.
- Cook Tortellini: Add tortellini and cook until al dente.
- Make Cream Swirl: Blend sun-dried tomatoes, cream, garlic, paprika, and olive oil.
- Warm Cream: Gently warm the cream mixture.
- Assemble & Garnish: Swirl cream into soup; garnish with basil, cheese, and olive oil.
- Serve: Serve immediately.
