- 2 tbsp (30 ml) olive oil
- 7oz (200g) spiced chicken sausage, sliced
- 1 cup (150g) diced onion
- 2 cloves minced garlic
- 1 cup (150g) diced carrots
- 1 cup (100g) diced celery
- 1 tsp (5g) smoked paprika
- 1 tsp (2g) dried thyme
- 14oz (400g) canned white beans, drained and rinsed
- 7oz (200g) fresh spinach
- 4 cups (1L) low-sodium vegetable broth
- 1 cup (240ml) heavy cream or plant-based cream
- 2 tbsp (30g) roasted garlic puree
- 1 tbsp (15ml) fresh lemon juice
- Salt and pepper to taste
- ¼ cup (30g) grated Parmesan cheese
- 2 tbsp (8g) chopped fresh parsley
Instructions
- Sauté Sausage: Brown sliced sausage in olive oil for 4-5 minutes.
- Build Base: Sauté onion, carrots, and celery for 6-7 minutes until softened.
- Bloom Spices: Stir in garlic, paprika, and thyme for 1 minute until fragrant.
- Simmer Soup: Add beans and broth; simmer for 10 minutes.
- Combine & Wilt: Return sausage to pot; wilt spinach for 2-3 minutes.
- Prepare Cream: Whisk cream, garlic puree, lemon juice, and salt until warm and smooth.
- Serve & Garnish: Ladle soup, drizzle with cream, and garnish with Parmesan and parsley.
Notes
For a richer flavor, use full-fat heavy cream. Roasting your own garlic enhances the flavor of the cream swirl.
