Description

  • 2 tsp (8 g) baking powder

  • 240 ml (1 cup) whole milk or plant-based milk
  • 2 large eggs
  • 60 g (0.25 cup) melted unsalted butter
  • 1 tsp (5 ml) vanilla extract
  • 120 g (0.5 cup) softened cream cheese
  • 2 tbsp (30 ml) maple syrup
  • 0.5 tsp (2.5 g) ground cinnamon
  • 0.25 tsp (0.5 g) ground nutmeg
  • 1 tsp (5 ml) lemon juice
  • 30 g (2 tbsp) melted unsalted butter
  • 30 g (0.25 cup) brown sugar
  • 0.5 tsp (2.5 g) ground cinnamon
  • 30 g (2 tbsp) toasted pecans (optional)
  • 2 tbsp (30 ml) maple syrup for drizzle
  • Pinch of flaky sea salt

Instructions

  1. Preheat & Prep: Preheat oven to 190°C (375°F) and line a muffin tin with liners.
  2. Combine Dry Ingredients: Whisk flour, sugar, baking powder, and salt in a bowl.
  3. Combine Wet Ingredients: Whisk milk, eggs, melted butter, and vanilla.
  4. Combine Wet & Dry: Gently combine wet and dry ingredients, avoiding overmixing.
  5. Prepare Cream Cheese Swirl: Beat cream cheese, maple syrup, cinnamon, nutmeg, and lemon juice.
  6. Layer & Swirl: Spoon batter into cups, add swirl, and gently swirl with toothpick.
  7. Top & Bake: Top with more batter, drizzle with butter-sugar-cinnamon mix, and bake for 18-20 minutes.
  8. Cool & Serve: Cool in tin for 5 minutes, then transfer to rack, drizzle with maple syrup, and sprinkle with salt.

Notes

For best results, use room temperature eggs and softened cream cheese. Don’t overmix the batter to avoid tough muffins. Toasting pecans enhances their flavor.
