  • 100 g (3.5 oz) mozzarella cheese, 1 cm cubes
  • 1 large onion, thinly sliced
  • 1 tbsp (15 ml) olive oil
  • 1 tsp (5 g) sugar
  • 2 tbsp (30 ml) Dijon mustard
  • 1 tsp (5 g) smoked paprika
  • 0.5 tsp (2 g) garlic powder
  • 0.5 tsp (2 g) black pepper
  • 0.5 cup (60 g) all-purpose flour
  • 2 large eggs, beaten
  • 1 cup (120 g) pumpernickel or rye breadcrumbs
  • Vegetable oil for deep-frying
  • 0.5 cup (120 ml) halal mayonnaise
  • 0.25 cup (60 ml) ketchup
  • 0.25 cup (60 ml) sweet pickle relish
  • 1 tbsp (15 ml) apple cider vinegar
  • 1 tbsp (15 ml) granulated sugar
  • 1 tsp (5 ml) sriracha or chili garlic sauce
  • 0.5 tsp (2 g) smoked paprika
  • Pinch of salt
  • 2 tbsp (30 g) fresh chives, chopped

Instructions

  1. Caramelize Onions: Heat olive oil and sugar with sliced onion, cook until golden.
  2. Combine Filling: Mix corned beef, sauerkraut, Swiss cheese, mustard, paprika, garlic powder, pepper, and onions.
  3. Prepare Coating: Set up stations with flour, eggs, and breadcrumbs.
  4. Form Balls: Scoop mixture, add mozzarella, seal, and shape into balls.
  5. Coat Balls: Roll in flour, dip in egg, coat with breadcrumbs.
  6. Fry Balls: Fry in hot oil until golden brown and crispy.
  7. Make Sauce: Whisk together mayonnaise, ketchup, relish, vinegar, sugar, sriracha, paprika, and salt.
  8. Plate & Garnish: Arrange balls, drizzle with sauce, and garnish with chives.
