- Prepare the Base Dipping Sauce: In a medium bowl, combine the warm water and granulated sugar. Stir with a whisk for about 1-2 minutes until the sugar is completely dissolved. Add the fish sauce, fresh lime juice, finely minced garlic, and finely minced red bird’s eye chilies. Stir well until evenly combined and set aside for at least 5 minutes.
- Make the Spicy Mango Swirl: In a small blender or food processor, combine the peeled and pitted mango flesh and red pepper flakes. Blend for 30-60 seconds until completely smooth. If the puree is too thick, add 1-2 tablespoons of water, blending again until it reaches a consistency similar to thin yogurt.
- Combine and Swirl: Pour the prepared base dipping sauce into a serving bowl. Gently spoon dollops of the spicy mango puree over the surface. Using a skewer or the back of a spoon, carefully swirl the mango puree into the base sauce to create distinct ribbons and patterns; avoid overmixing.
- Chill and Serve: Cover the serving bowl and refrigerate the dipping sauce for at least 30 minutes for flavors to fully develop and meld. Serve chilled for the best experience.
- Plating and Garnish: Transfer the swirled dipping sauce into a shallow white ceramic bowl. Drizzle a small amount of any remaining spicy mango puree over the top for extra flair. Finally, sprinkle a pinch of finely chopped fresh mint leaves just to one side for a bright green contrast and aromatic freshness.
Notes
For a sweeter sauce, add an extra teaspoon of sugar to the base. For more spice, stir in an extra pinch of red pepper flakes after tasting. To thin the sauce, add water very gradually.
