Instructions

  1. Gather & Prep Ingredients: Measure all ingredients, roughly chop garlic and ginger (no need for fine mincing), drain roasted red peppers, and have warm water ready.
  2. Blend to Creamy Smoothness: Combine peanut butter, coconut milk, tamari, maple syrup, rice vinegar, lime juice, chopped garlic, chopped ginger, roasted red peppers, gochujang, and sesame oil in a high-speed blender. Blend on high until completely smooth and creamy, scraping down sides if needed.
  3. Thin & Adjust Consistency: With the blender running on low, gradually add warm water, 1 tablespoon at a time, until the sauce reaches a consistency thick enough to cling to a spring roll but is easily pourable (usually 3-4 tablespoons).
  4. Finish with Zest & Seasoning: Taste the sauce and adjust seasoning as needed with more lime juice for tang, maple syrup for sweetness, or tamari for savory depth to achieve a balanced and vibrant flavor.
