Description

This recipe creates a homemade version of the popular Starbucks Strawberry Acai Refresher (or Iced Pink Refresher), offering a sweet-tart, vibrant pink drink that’s easy to customize and enjoy at home.

Ingredients

Scale
  • 1 cup (240ml) white grape juice, 100% juice (or sugar-free)
  • 0.25 cup (7g) freeze-dried strawberries, no added sugar
  • 1 teaspoon acai powder or 2 tablespoons (30ml) acai juice, unsweetened
  • 0.25 teaspoon green coffee extract powder (optional, for caffeine)
  • 0.5 cup (120ml) cold water
  • 0.5 cup (120ml) coconut milk (optional, for creamy version; full-fat or light)
  • Lemon or lime slices (optional, for garnish)
  • Fresh strawberries or other berries (optional, for garnish)
  • 12 teaspoons sweetener (optional, honey, agave, or sugar substitute)

Instructions

  1. Prepare The Base: In a medium pitcher or 4-cup (1 liter) measuring cup, combine the white grape juice, acai powder or juice, and green coffee extract (if using). Whisk vigorously for about 1 minute until the powder is fully dissolved and the mixture is a deep berry color, ensuring no clumps remain.
  2. Add Strawberry Flavor: Stir in the freeze-dried strawberries and cold water. Let the mixture sit for 5-10 minutes, allowing the strawberries to rehydrate and infuse their vibrant flavor and aroma into the liquid. (Optional: strain the mixture through a fine-mesh sieve after steeping for a smoother drink).
  3. Sweeten To Taste: Taste the concentrate. If you desire more sweetness, add your preferred sweetener (honey, agave, or sugar substitute) 1 teaspoon at a time, stirring until fully dissolved.
  4. Chill Concentrate: Cover the concentrate and refrigerate it for at least 30 minutes, or until thoroughly chilled.
  5. Assemble Drink: Fill a 16-ounce (480ml) glass or jar generously with ice cubes. Pour about 0.75 cup (180ml) of the chilled strawberry acai concentrate over the ice.
  6. Customize With Coconut Milk (Optional): If making the creamy Iced Pink Refresher, gently pour 0.5 cup (120ml) of coconut milk over the concentrate and ice. Stir lightly to combine.
  7. Garnish And Serve: Add a few fresh strawberry slices or a lemon or lime wedge for garnish. Serve immediately.

Notes

For a smoother drink, strain the mixture after steeping. The base concentrate can be made ahead and chilled. Use organic ingredients and sugar-free options for a healthier version. Fresh strawberries are great when in season.
