  • 180g (6oz) Egg Noodles: chewy texture, richer flavor
  • 2 tbsp (30ml) Vegetable Oil: neutral flavor for stir-frying
  • 4 cloves Garlic, minced: aromatic flavor
  • 1 tsp (5g) Ginger, grated: warm spice
  • 2 tbsp (30ml) Low-Sodium Soy Sauce: savory flavor base
  • 1 tbsp (15ml) Dark Soy Sauce: rich color
  • 1 tbsp (15ml) Honey: natural sweetness
  • 1 tbsp (15ml) Rice Vinegar: bright acidity
  • 0.5 tsp (2.5g) Red Pepper Flakes: gentle heat
  • 1 tsp (5ml) Sesame Oil: nutty aroma
  • 1 tbsp (8g) Cornstarch + 2 tbsp (30ml) Water: thickening agent
  • 2 tbsp (15g) Sesame Seeds, toasted: crunchy garnish
  • 2 Spring Onions, sliced: fresh onion flavor
  • 1 tbsp (8g) Cilantro, chopped: herbaceous note
  • 1 Lime, wedges: final freshness

Instructions

  1. Marinate Chicken: Combine chicken with soy sauce, cornstarch, and ginger; rest for 10 minutes.
  2. Cook Noodles: Boil noodles until al dente; drain, rinse, and toss with sesame oil.
  3. Prepare Sauce: Whisk together soy sauce, dark soy sauce, honey, rice vinegar, red pepper flakes, garlic, and sesame oil.
  4. Sear Chicken: Sear chicken in hot oil until cooked through.
  5. Sauté & Glaze: Sauté garlic and ginger; add sauce and cornstarch slurry; simmer until thickened.
  6. Combine & Coat: Return chicken to pan, add noodles, and toss to coat.
  7. Rest & Serve: Let rest for 2 minutes before plating.

Notes

For best results, don’t overcrowd the pan when searing the chicken. Adjust the amount of red pepper flakes to your spice preference.
