Description

This vibrant strawberry dole whip recipe offers a sweet, tangy flavor and a luxuriously smooth texture, reminiscent of a theme park treat. It’s a quick, satisfying, and secretly healthy dessert solution for any occasion.

Ingredients

Scale
  • 500 g frozen strawberries, unsweetened
  • 150 g frozen banana, peeled and sliced
  • 400 mL full-fat coconut milk, canned and chilled overnight
  • 60 mL fresh lime juice, divided
  • 15 g fresh lime zest, divided
  • 30 mL maple syrup, or to taste
  • 5 mL alcohol-free vanilla extract
  • 0.25 teaspoon sea salt
  • 0.25 cup unsweetened toasted coconut flakes, for garnish

Instructions

  1. Prepare Coconut Cream: Chill a can of full-fat coconut milk in the fridge overnight. On serving day, carefully open the chilled can and scoop out about 120 grams (0.5 cup) of the thick coconut cream from the top, reserving the remaining liquid.
  2. Whip Lime-Coconut Swirl: To the scooped coconut cream, add 15 milliliters (1 tablespoon) of fresh lime juice, 5 grams (1 teaspoon) of lime zest, and 15 milliliters (1 tablespoon) of maple syrup. Whisk gently until just combined and slightly lightened, avoiding over-whisking.
  3. Combine Base Ingredients: In a high-speed blender or robust food processor, combine the frozen strawberries, frozen banana slices, the reserved coconut liquid, remaining 45 milliliters (3 tablespoons) fresh lime juice, remaining 10 grams (2 teaspoons) lime zest, remaining 15 milliliters (1 tablespoon) maple syrup, vanilla extract, and sea salt.
  4. Blend Until Smooth: Process on low speed until the mixture begins to break down into a slushy consistency. Increase speed to high and continue blending until completely smooth and thick, resembling soft-serve ice cream. Scrape down the sides as needed. This usually takes 3-5 minutes. (If too thin, add more frozen strawberries; if too thick, splash in 1-2 tablespoons of the reserved coconut liquid.)
  5. Swirl and Serve: Immediately scoop the vibrant strawberry dole whip into individual chilled serving bowls or glasses. Dollop spoonfuls of the prepared lime-coconut cream into the dole whip base and gently swirl it in for a marbled effect.
  6. Garnish and Enjoy: Garnish each serving generously with toasted coconut flakes and serve immediately while it’s perfectly soft and cold.

Notes

For a lower-carb option, omit banana, use full-fat coconut cream, and sweeten with erythritol. For a high-protein snack, blend in 1 scoop of your favorite vanilla protein powder. If the blend is too thick, add a tablespoon of the reserved coconut liquid at a time; if too thin, add more frozen strawberries or a few ice cubes.
