strawberry fluff recipe
- Total Time: 162 minutes
- Yield: 6–8 servings 1x
- Diet: General
Description
This exquisite strawberry fluff recipe, with its delicate rosewater aroma and vibrant pink hue, is a delightful twist on a classic, offering pure joy in every creamy bite. It’s perfect for busy parents needing a no-fuss dessert that feels special, or anyone wanting a comforting, yet elevated, treat.
Ingredients
- 16 oz frozen strawberries, partially thawed
- 0.5 cup granulated sugar, divided
- 2 cups heavy whipping cream, well chilled
- 1 teaspoon (alcohol-free) vanilla extract
- 1 teaspoon rosewater
- 0.5 teaspoon agar-agar powder
- 0.25 cup hot water
- 0.5 cup unsalted shelled pistachios, divided
- 0.25 cup all-purpose flour
- 2 tablespoons unsalted butter or vegetable shortening (from permissible sources)
- 0.25 teaspoon edible dried rose petals
Instructions
- Macerate Strawberries: In a medium bowl, combine the partially thawed strawberries with 75 g (scant 1/3 cup) of the granulated sugar. Mash them roughly with a fork or potato masher, leaving some larger pieces for texture. Let this mixture macerate for 15 minutes.
- Prepare Pistachio Crumble: Preheat your oven to 325°F (160°C). In a small food processor, pulse 30 g (1/4 cup) pistachios, flour, the remaining 25 g (1/8 cup) sugar, and softened butter or shortening until coarse crumbs form. Spread this mixture evenly on a small baking sheet lined with parchment paper. Bake for 10-12 minutes, or until lightly golden. Let cool completely; it will crisp further.
- Dissolve Agar-Agar: In a small saucepan, whisk 0.5 teaspoon agar-agar powder into 0.25 cup (60 ml) hot water. Bring to a gentle simmer over medium heat, stirring constantly, for 1 minute until the powder is fully dissolved and the liquid is clear. Remove from heat and let cool slightly for 5 minutes (it should still be warm and liquid).
- Whip Cream: In a large, chilled bowl, combine the heavy whipping cream, (alcohol-free) vanilla extract, and rosewater. Beat with an electric mixer on medium-high speed until soft peaks form, looking light and airy.
- Combine Fluff Base: Gently fold the macerated strawberry mixture into the whipped cream. Then, slowly drizzle the slightly cooled agar-agar solution into the strawberry-cream mixture while gently folding until just combined. Be careful not to overmix, as this can deflate the fluff’s volume.
- Chill the Fluff: Spoon the strawberry fluff into individual serving bowls or a larger communal bowl. Cover the bowl and refrigerate for at least 2 hours, or until the fluff is set and feels well chilled.
- Garnish and Serve: Finely chop the remaining 20 g (1/4 cup) pistachios. Spoon the chilled strawberry fluff into dessert bowls. Create a diagonal line across the surface of the fluff with the pistachio crumble. Scatter the finely chopped pistachios and edible dried rose petals onto the plain area for vibrant color and textural contrast.
Notes
Frozen strawberries are ideal for convenience; if using fresh, ensure they are ripe, hulled, chopped, and thoroughly chilled. Consider organic strawberries and high-quality rosewater for enhanced flavor. For lower-sugar, use a substitute; for dairy-free, use coconut cream; for gluten-free, use a GF flour blend. Avoid overmixing to prevent deflation and ensure agar-agar is fully dissolved and warm when adding to the mix.
