It’s a quick and easy family favorite for brunches, featuring fresh strawberries enhanced with vanilla, rose water, and lemon.
Ingredients
- 4 cups fresh strawberries, hulled and quartered (approx. 600g; frozen strawberries work perfectly, no need to thaw)
- 0.25 cup granulated sugar (50g; maple syrup or honey can be swapped for a different flavor profile; erythritol or stevia for sugar-free)
- 1 tablespoon lemon juice, freshly squeezed (15ml)
- 1 teaspoon vanilla bean paste (5ml; extract is fine)
- 0.5 teaspoon rose water (2.5ml)
- Pinch of salt (optional)
Instructions
- Prepare Strawberries: Hull and quarter 4 cups of fresh strawberries and arrange them in a medium saucepan. (If using frozen berries, add them directly to the pan, no need to thaw).
- Simmer Ingredients: In the same saucepan, add 0.25 cup granulated sugar and 1 tablespoon lemon juice. Bring the mixture to a gentle simmer over medium heat for 8-10 minutes, stirring occasionally, until the berries soften and release their juices.
- Infuse Flavors: Remove the saucepan from the heat. Stir in 1 teaspoon vanilla bean paste and 0.5 teaspoon rose water. Let the mixture cool slightly for about 5 minutes to allow the delicate flavors to meld.
- Blend and Finish: Carefully transfer the slightly cooled strawberry mixture to a blender or food processor. Blend until it’s smooth and velvety. For an extra silky puree, pass the blended mixture through a fine-mesh sieve. (If the puree looks too thin after blending, return it to the saucepan and simmer uncovered for an extra 5-7 minutes to reduce it to your desired thickness).
Notes
For a richer, almost jam-like consistency, stir in 0.5 teaspoon of butter at the end. A dash of balsamic vinegar, added during simmering, can deepen the berry flavor. Opt for organic strawberries when possible. For a chunkier texture, blend for less time. If puree is too thick, add a splash of water, orange juice, or lemon juice. If not sweet enough, stir in more sugar or sweetener while warm. Store in an airtight container in the refrigerator for up to 5 days.
