Description

Ingredients

  • 200 g (1 cup) granulated sugar
  • 240 mL (1 cup) filtered water
  • 5 g (1 tbsp) whole pink peppercorns, for infusion
  • 12 g (1/21 tsp) whole pink peppercorns, for visual finish

Instructions

  1. Combine Ingredients: In a medium saucepan, add the chopped fresh strawberries, granulated sugar, filtered water, and the initial 5 g (1 tablespoon) of whole pink peppercorns. Place the saucepan over medium heat and stir occasionally.
  2. Simmer and Soften: Bring the mixture to a gentle simmer, stirring continuously until the granulated sugar has completely dissolved. Continue to simmer for 10-15 minutes, or until the strawberries have softened significantly and released their vibrant red color into the liquid.
  3. Steep for Infusion: Remove the saucepan from the heat once the strawberries are soft and the liquid is vibrant red. Let the mixture steep for an additional 15-20 minutes to allow the pink peppercorns to deeply infuse their subtle floral and peppery notes into the syrup.
  4. Strain the Syrup: Carefully strain the mixture through a fine-mesh sieve set over a heatproof bowl to separate the liquid from the solids. Press gently on the solids with the back of a spoon to extract as much liquid and flavor as possible. Discard the remaining strained strawberry solids and peppercorns.
  5. Add Visual Finish: Once the strawberry simple syrup is strained and still warm, stir the additional 1-2 g (1/2-1 teaspoon) of whole pink peppercorns into the liquid.
  6. Cool and Store: Allow the strawberry simple syrup to cool completely to room temperature before transferring it to an airtight bottle or jar. Store the finished syrup in the refrigerator for up to 2-3 weeks.

Store in the refrigerator for up to 2-3 weeks. Use fresh, ripe strawberries for the best flavor and avoid frozen berries. If the mixture looks too thick during simmering, add a tablespoon or two of water to ensure a smooth consistency.
