- 1–2 tsp honey or maple syrup, to taste (use maple syrup for vegan option)
- 0.5 tsp Dijon mustard
- 0.25 tsp salt
- 0.125 tsp black pepper
- 1 tsp fresh lemon juice (optional)
Instructions
- Prep the Berries: Hull and quarter 1 cup (150g) of fresh strawberries.
- Blend Ingredients: In your blender or a mini food processor, combine the prepped strawberries, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper. Blend until smooth and rosy, about 60-90 seconds.
- Emulsify with Oil: With the blender running on low speed, slowly drizzle in the 0.5 cup (120ml) olive oil. Continue blending until the mixture thickens into a creamy emulsion.
- Stir in Poppy Seeds: Transfer the emulsified dressing to a bowl. Gently stir in the 1 teaspoon of poppy seeds.
- Taste and Adjust: Taste the dressing and adjust for sweetness, tang, or salt to achieve your perfect balance.
