Description

This stuffed artichoke recipe features tender artichokes with a vibrant Lemon-Parsley Breadcrumb Crown. It’s an impressive yet simple-to-make dish, perfect for a healthy and satisfying family dinner.

Ingredients

Scale
  • 2 large or 4 medium fresh Artichokes
  • 1 cup (90g) Panko Breadcrumbs
  • 0.5 cup (15g) fresh Parsley, finely chopped
  • 1 large Lemon, zested and juiced
  • 3 cloves Garlic, minced
  • 0.25 cup (60ml) extra virgin Olive Oil
  • 0.5 cup (50g) grated Parmesan Cheese (optional)
  • 1 cup (240ml) Chicken or Vegetable Broth
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Instructions

  1. Prepare Artichokes: On a sturdy cutting board, carefully trim the stem flat so the artichoke sits upright. Snip off the thorny tips of the outer leaves with kitchen shears. Using a spoon, scoop out the fuzzy choke from the center, revealing the heart.
  2. Make Filling: In a medium bowl, combine the breadcrumbs, chopped fresh parsley, lemon zest, minced garlic, olive oil, and grated Parmesan (if using). Mix until evenly moistened and fragrant.
  3. Stuff Artichokes: Gently pry open each leaf of the prepared artichokes. Spoon the breadcrumb mixture into the crevices between the leaves, pushing it down gently but firmly.
  4. Cook Artichokes: Place the stuffed artichokes upright in a large, deep pot or Dutch oven. Pour in the broth, ensuring it reaches about 1-2 inches up the sides of the artichokes, but does not cover the filling. Cover tightly and steam until the outer leaves pull away easily and the heart is fork-tender.
  5. Finish Artichokes: Carefully transfer the cooked artichokes to a baking sheet. Briefly broil for 3-5 minutes, watching closely, until the Lemon-Parsley Breadcrumb Crown is golden brown and extra crispy.

Notes

For a low-carb alternative, swap out traditional breadcrumbs for almond flour or crushed seasoned pork rinds in the filling. To make it vegan-friendly, simply omit the Parmesan cheese and use vegetable broth for steaming. Always opt for fresh, firm artichokes with tight leaves for the best results. Cooking time varies with artichoke size.
