  • 1 tsp (5 ml) paprika
  • Salt, to taste

Instructions

  1. Brown the Ground Turkey: In a large, heavy-bottomed pot or Dutch oven, brown 1 lb (450 g) ground turkey over medium-high heat for 5-7 minutes until no pink remains, breaking it up with a spoon. Drain any excess fat.
  2. Sauté Aromatics: Add 1 chopped onion and 2 minced garlic cloves to the pot. Cook until the onion softens and becomes translucent, about 3-4 minutes.
  3. Build the Base: Stir in 2 chopped bell peppers, the 28-oz (794 g) can undrained diced tomatoes, the 15-oz (425 g) can tomato sauce, and 4 cups (946 ml) chicken or vegetable broth. Add 1 tbsp (15 ml) Italian seasoning, 1 tsp (5 ml) paprika, salt, and pepper to taste. Mix everything well.
  4. Simmer the Soup: Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  5. Cook the Rice: Stir in 1 cup (200 g) uncooked white rice. Cover and continue to simmer for 15-20 minutes, or until the rice is tender and has absorbed most of the liquid. Check halfway and stir to prevent sticking; add a splash of extra broth if the rice looks dry.

Notes

For a thicker, heartier soup, use slightly less broth. If you prefer a lighter, more brothy version, add extra broth or swap some of the rice for more chopped zucchini or spinach. Be careful not to overcook the rice, as it can turn mushy. Ensure your ground turkey is fully browned at the start for the best savory foundation. Adjust salt to taste, especially if using regular (not low-sodium) broth. Stirring the rice a couple of times during cooking helps ensure it cooks evenly.
