- 2 tablespoons fresh thyme, chopped
- 0.25 cup fresh parsley, chopped
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper

- Prep Bread: Tear bread into 1-inch pieces (approximately 6 cups) and spread on a large sheet pan. Let air dry for 1-2 hours, or toast lightly in a 250F (120C) oven for 15-20 minutes until slightly firm but not hard.
- Sauté Aromatics: In a large 10-inch skillet, melt the butter over medium heat. Add diced onions and celery. Cook for 8-10 minutes, stirring occasionally, until softened and fragrant, becoming translucent.
- Infuse Herbs: Stir in the chopped fresh sage, thyme, and parsley with the softened vegetables. Cook for 1 minute more until the herbs are incredibly aromatic.
- Combine And Moisten: In a large bowl, combine the dried bread cubes, sautéed vegetable-herb mixture, salt, and pepper. Gradually pour in the chicken or vegetable broth, mixing gently until all bread is moistened. If it looks dry, splash in 1-2 tablespoons more broth until just moist.
- Bake: Transfer the mixture to a 9×13 inch baking dish. Bake uncovered at 375F (190C) for 30-40 minutes.
