- 2 tsp baking powder
Instructions
- Cream the Butter and Sugar: In a large bowl, cream ½ cup unsalted butter and 1¼ cups sugar using a hand or stand mixer on medium speed until light and fluffy, about 2–3 minutes.
- Add Eggs and Vanilla: Add 1 large egg and 1 yolk, followed by 1 tsp vanilla extract. Mix until just combined.
- Combine Dry Ingredients: In a separate bowl, whisk together 2½ cups all-purpose flour, 2 tsp baking powder, and ¾ tsp sea salt. Slowly mix into wet ingredients until dough forms.
- Optional Chill: Use dough immediately or chill for 30–60 minutes for thicker cookies.
- Scoop and Roll: Scoop dough with a 2–3 tablespoon scoop, roll into balls, and coat in sugar. Place 2 inches apart on parchment-lined baking sheet.
- Bake: Bake at 350°F (175°C) for 10–12 minutes, just until edges are set and lightly golden. Let cool 5 minutes on tray before transferring.

- You can use coconut oil or shortening instead of butter for a dairy-free option.
