Instructions
- Season Rice: In a large bowl, combine 4 cups cooked sushi rice with 3 tbsp rice vinegar, 1 tbsp sugar, and 1 tsp salt. Mix gently until glossy and evenly seasoned.
- Prepare Crab Mixture: Shred 1 lb (450g) imitation crab. Stir in 0.5 cup (120ml) Kewpie mayo and 2 tbsp (30ml) sriracha until the mixture is creamy.
- Layer Rice: Lightly grease a 9×13 inch baking dish. Press the seasoned rice firmly into the base. (If the rice feels too sticky, dampen your hands slightly.)
- Add Crab Topping: Spread the creamy crab mixture evenly over the pressed rice layer, reaching all edges.
- Bake and Broil: Bake at 375°F (190°C) for 20-25 minutes until heated through. Broil for 2-3 minutes until golden and bubbly. Watch closely to prevent burning.
Notes
