- 1 cup pineapple juice (unsweetened if you’re watching sugar)
- ¾ cup barbecue sauce (use sweet, smoky, or tangy depending on your mood)
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp brown sugar
- 1 tsp garlic powder
- Optional: 1 cup pineapple chunks for added texture
Instructions
- Prep Chicken: Place the chicken thighs in the bottom of your slow cooker.
- Mix Sauce: In a separate bowl, whisk together the pineapple juice, barbecue sauce, soy sauce, brown sugar, and garlic powder.
- Combine: Pour the mixture over the chicken, making sure it’s fully coated. If using pineapple chunks, sprinkle them on top.
- Cook: Cover and cook on LOW for 6 hours or on HIGH for 3½ hours.
- Shred and Serve: Shred the chicken using two forks right in the pot and mix it into the sauce. Serve over jasmine rice, veggies, or in sandwiches.
