Description

This air fryer sweet potato fries recipe delivers crispy edges and a creamy interior, perfectly paired with a zesty smoked maple glaze for a sweet and savory flavor.

Ingredients

Scale
  • 2 medium sweet potatoes (about 600 g), peeled and cut into 1/4-inch fries
  • 1 tbsp olive oil
  • 1 tbsp cornstarch
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper
  • 4 tbsp pure maple syrup
  • 2 tbsp fresh lime juice
  • 1/2 fresh lime zest
  • 1 tsp smoked paprika
  • 1/8 tsp fine sea salt

Instructions

  1. Prep Sweet Potatoes: Soak cut sweet potatoes in cold water for exactly 30 minutes to remove excess starch. Drain thoroughly and pat them extremely dry with a clean kitchen towel.
  2. Coat and Preheat: Preheat your air fryer to 390°F (200°C) for at least 5 minutes. In a large bowl, toss the dried sweet potatoes with olive oil, cornstarch, 1/2 tsp salt, and pepper until evenly coated.
  3. Air Fry in Batches: Arrange the coated fries in the air fryer basket in a single layer. Cook for 15-20 minutes at 390°F, shaking the basket every 5-7 minutes until they are golden brown and crispy. Cook in separate batches to avoid overcrowding.
  4. Prepare Glaze: While the fries cook, combine maple syrup, lime juice, smoked paprika, and 1/8 tsp salt in a small saucepan. Bring to a gentle simmer for 2-3 minutes until slightly thickened.
  5. Glaze and Serve: Transfer the hot fries to a clean bowl and toss immediately with half of the glaze. Plate the fries, drizzle with the remaining glaze, and garnish with fresh lime zest and smoked paprika.

Notes

To achieve maximum crispiness, thoroughly dry the sweet potatoes after soaking and cook them in a single layer in batches; overcrowding causes the fries to steam instead of crisping.
