Ingredients

- 3.5 cups (420g) all-purpose flour
- 2.25 teaspoons active dry yeast
- 1 cup (240ml) warm whole milk
- 0.25 cup (57g) unsalted butter, melted, plus 2 tablespoons (28g) for the brush
- 0.25 cup (50g) granulated sugar, plus a pinch for yeast activation
- 1 teaspoon (6g) salt
- 0.25 teaspoon saffron threads
- 2 tablespoons (42g) honey (for the brush)
Instructions
- Cook Sweet Potatoes: Boil or steam sweet potatoes until very tender (about 15-20 minutes). Mash until completely smooth and creamy.
- Activate Yeast: In a large bowl, dissolve active dry yeast with a pinch of sugar in 1 cup of warm milk (105-115 degrees F (40-46 degrees C)). Let it bloom for 5-10 minutes until visibly foamy.
- Mix Dough: Combine the mashed sweet potato, yeast mixture, 3.5 cups of all-purpose flour, 0.25 cup melted butter, 0.25 cup sugar, and salt. Knead the dough until smooth and elastic, about 8-10 minutes by hand or 5-7 minutes with a stand mixer. (If the dough feels too dry, add milk one tablespoon at a time until soft and pliable.)
- First Rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise in a warm place until doubled in size, typically 1-1.5 hours.
- Shape Rolls: Gently punch down the risen dough. Divide it into 12-16 equal pieces and shape each into a smooth, round ball. Arrange these balls in a greased 9×13-inch baking dish, leaving space between each.
- Second Rise: Cover the baking dish and let the rolls rise in a warm spot for another 30-45 minutes, until puffy and nestled close together.
- Bake Rolls: Preheat oven to 375 degrees F (190 degrees C). Bake for 20-25 minutes until the tops are golden brown and they sound hollow when tapped lightly.
