Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Prepare Sweet Potatoes: Peel and cube 2 lbs of sweet potatoes into 1-inch pieces. In a large bowl, toss them with 1 tbsp olive oil, a pinch of salt, and a grind of fresh pepper until evenly coated.
  3. Roast Sweet Potatoes: Spread the seasoned sweet potato cubes in a single layer on a large sheet pan. Roast for 20-25 minutes, or until edges are lightly caramelized and potatoes are tender. Let them cool slightly for about 10 minutes.
  4. Whisk Dressing: In a small bowl, whisk together 0.25 cup olive oil, 2 tbsp apple cider vinegar, 1 tbsp maple syrup, 1 tsp Dijon mustard, 0.5 tsp cumin, and salt and pepper to taste until smooth and emulsified.
  5. Combine And Serve: In a large mixing bowl, gently combine the cooled roasted sweet potatoes, 0.5 cup pomegranate arils, and 0.25 cup fresh chopped cilantro. Pour the whisked dressing over the mixture and toss carefully to coat all ingredients evenly. Serve warm or chilled.
