- 2.5g (½ tsp) Garlic Powder
- 2.5g (½ tsp) Onion Powder
- 5ml (1 tsp) Kosher Salt & 2.5ml (½ tsp) Black Pepper
- 200g (7oz) Fresh Raspberries
- 30ml (2 Tbsp) Honey
- 15ml (1 Tbsp) Lime Juice
- 5ml (1 tsp) Apple Cider Vinegar
- 5ml (1 tsp) Soy Sauce
- 60ml (¼ cup) Chicken Broth
- 5g (1 tsp) Cornstarch mixed with 10ml (2 tsp) Water
- 10g (≈ handful) Cilantro Leaves, garnish
- 5g (1 tsp) Lime Zest, garnish
- 3–4 Whole Raspberries, plating accent
Instructions
- Season Chicken: Combine spices and season chicken thighs.
- Sear Chicken: Sear chicken in olive oil until golden-brown.
- Sauté Jalapeño: Sauté minced jalapeño, then deglaze pan with broth.
- Make Glaze: Simmer honey, lime juice, vinegar, soy sauce, and raspberries.
- Bake Chicken: Bake chicken in glaze until cooked through (74°C/165°F).
- Finish Glaze: Thicken sauce with cornstarch slurry.
- Rest & Slice: Rest chicken before slicing diagonally.
- Plate & Garnish: Arrange chicken, drizzle glaze, and garnish.
Notes
For best results, use fresh raspberries and chicken thighs. Adjust jalapeño amount to control spice level. Resting the chicken ensures juiciness.
